I'm realistic enough to acknowledge that cleaning up is an unavoidable part of the cooking process. If I'm in the kitchen, there are going to be dishes to do. That doesn't mean I want to do any more than necessary, though. Thank goodness for all the one-bowl and one-pan recipes out there, of which we featured several this week. First up, my Maple Oatmeal Muffins. Especially when I'm bleary-eyed in the morning, I can't be bothered to pull out lots of equipment when I want a sunrise pick-me-up. So I developed this vegan, whole-grain and naturally sweetened recipe to come together in a single bowl, including the crucial step of soaking the rolled oats in boiling water for a supremely plush, tender texture. Busy evenings are also a time you want to keep dishes to a minimum, and two of our columnists this week helped you get there. In Dinner in Minutes, Aaron Hutcherson offered a one-pan recipe for Skillet Orzo With Chicken, Spinach and Goat Cheese, which creates a delightful contrast of creamy, sweet and earthy flavors. For Nourish, Ellie Krieger shared another dinner made in a single pan. Skillet Shrimp With White Beans, Garlic and Chile is a quick – 25 minutes! – but supremely flavorful meal that makes the most of canned beans, zesty Calabrian chile peppers, nutritious baby spinach and lean shrimp. If you're willing to add one more piece of equipment to the mix, have a look at Joe Yonan's Mushroom, Bean and Couscous Soup. While dried white beans cook in the Instant Pot, you use a Dutch oven on the stovetop to build a savory base of onions, herbs, mushrooms, sun-dried tomatoes and pearl couscous.
